Blueberry Vegan Pancakes (Side)

If you didn’t know, I’m vegetarian. But ever so recently, I’m trying to become vegan. However, one thing I could not live without would be pancakes if I went vegan. So, once I discovered you still could make pancakes, I decided to try them out. To spice them up, I added blueberries, because, well everyone needs sweetness in their lives?!


  • 250ml of porridge oats
  • 160ml of soya milk
  • 1 ripe, large banana
  • 1 teaspoon of cinnamon
  • 1 teaspoon of vanilla
  • Handful of blueberries
  • Oil for the pan


  1. Blend the oats in a blender until they resemble a flour like texture.
  2. Add the soya milk, banana, cinnamon and vanilla.
  3. Mix until they are fully combined and are not too liquidly.
  4. Heat up a pan and add some oil.
  5. Spoon some of the mixture into the pan.
  6. Cook for two-three minutes on one side.
  7. After flipping it over, sprinkle some blueberries over and push them down to ensure they release all their juice.
  8. Slide them onto a plate.

They actually are naturally sweet, so don’t require any more ingredients but for toppings, I chose some lemon and sugar and jam.

  1. Mmm, these look so tasty! I know someone who makes them with almond milk I think, I had them once and they were very nice. If you don’t mind me asking, do you not eat flour as well, or are the oats just for a different taste? (If you don’t want to answer then it’s absolutely fine!) I’ve been under the impression that flour is vegan but I don’t actually know haha.

    1. I am personally not vegan, I am vegetarian! The reason I made these with oats was because oats have more flavour and contain more nutrients than flour. Any type of flavoured soya milk is fine for these, next time I might make them with vanilla or chocolate soya milk!

      1. Sorry yes, I just meant these pancakes are vegan so I didn’t know if the oats were to do with that! I see, thank you for informing me of that. I actually love chocolate alpro soya drink if you see that, it’s really tasty. 🙂
