Egg-less Pancakes Recipe

This morning I decided that I wanted pancakes for breakfast. However when I found a recipe I liked and looked in the fridge we had only one egg and in every recipe I looked you needed two! This then caused me to look for another one and I struck lucky with this one. These are supposed to make 4 pancakes but we made at least 8!

You will need:

  • 4oz Plain flour
  • 1 tsp sugar
  • 2  tsp baking powder
  • 9fl0z whole Milk
  • 2 tbsp water
  • 2 tbsp oil
  • oil for cooking

  • Around 114g Plain Flour
  • 1 tsp sugar
  • 2 tsp baking powder
  • Around 267ml Milk
  • 2 tbsp water
  • 2 tbsp oil
  • oil for cooking

I have added in the metric and imperial units in case your weighing scales do not have imperial or they do not have metric. As well, the milk does not necessarily have to be whole milk I used semi-skimmed.

  1. Sift the flour in to a bowl
  2. Add the sugar and baking powder and using a wooden spoon mix them in with the flour.
  3. Mix the water and oil with the milk. Remember not to add too much oil as it can be overpowering.
  4. Add the milk mixture to the bowl and mix with a whisk until it looks like a batter, don’t over mix though. Little bubbles do not matter but there should not be any big ones. Make sure to mix in all the flour so you do not get lumps.
  5. Add some oil to a pan and wait for the pan to heat up. Remember to spread the oil evenly around the pan to ensure even cooking.
  6. Stir the mixture once before adding to the pan as you mixture will have become thicker whilst the pan was warming up. Add as much mixture as you like (the thinner they are the harder to flip) of the pancake mixture to the frying pan and move it quickly around the pan until it’s covered the bottom.
  7. Lift the edge of the pancake and when it looks a little brown, flip it to cook the other side
  8. Once the pancake on both sides has gone golden brown, take off the heat and serve warm.
