This recipe belongs to Jamie Oliver, not me but I have provided credit to the original owner.
After making these cookies at my Granny’s, I decided to share some of the pictures I took of them and the recipe online.
Ingredients (makes 12 cookies but we did double quantities)!
- 100 g unsalted butter , slightly softened
- 125 g golden caster sugar
- 1 large free-range egg
- ½ teaspoon vanilla extract
- 200 g self-raising flour
- 1 pinch of fine sea salt
- 100 g quality chocolate
Step 1: Get all your ingredients in one place.
Step 2: Preheat the oven to 170ºC/325ºF/gas 3. Line two baking sheets with greaseproof paper.
Step 3: Beat the butter and sugar in a large bowl until pale and creamy.
Step 4: Crack in the egg, add the vanilla and mix
Step 5: Sift in and fold through the flour and salt.
Step 6: Roughly chop and stir in the chocolate. (and or marshmallows)!
Step 7: Roll tablespoons of the dough into balls and place onto the lined trays.
Step 8: Place and chill in the fridge for 15 minutes.
Step 9: Flatten the balls slightly with your fingers, then place in the hot oven for 10 to 12 minutes, or until lightly golden (make sure you don’t overdo them – the chewier the better).
Step 10: Let them cool and afterwards eat them!
The cookies we made were very yummy and gooey inside.
